A recipe for Honey Corn Muffins

 Last night we enjoyed fresh corn on the cob with dinner, and there was one cob left over. Seeing it in the refrigerator gave me the idea to make Honey Corn Muffins . I've yet to find a recipe I like, so I decided to try something new from the internet. I came upon  this recipe  on a website I'd never seen before (Jessica Gavin). I liked that it incorporated fresh corn, so I decided to try it. Immediately upon getting the ingredients I realized I didn't have enough honey. The recipe calls for 1/2 cup but I only had 1/4 cup.  But as Julia Child says, "make the recipe anyway"!  Instead of the missing 1/4 cup of honey I added 1/4 cup of light brown sugar. The ingredients come together very quickly, no mixer required. The batter is very liquidy!   The recipe says to bake the muffins at 400F for 15 minutes. But a review from a reader who made the muffins noted that they didn't rise. It does have 1 tablespoon of baking powder, quite a bit. There's no way to know

                                                        Vegan Blueberry Bakewell Tart A favorite cousin whom we hadn't seen in over 15 years was coming to town and we were all eager to see her. Since she is a vegan, many emails flew back and forth to plan a lunch menu that she would enjoy. It's always my turn to bring dessert, so I was looking forward to my first vegan bake! I decided to make a Blueberry Bakewell Tart because blueberries are such a summer favorite for everyone and most people like almond.  As I've written before, I love making tarts. They're easy, delicious and always look so pretty.  I found  this recipe  for a raspberry bakewell tart and decided to substitute blueberry jam and blueberries for the raspberries. The recipe does say it's fine to do this. Triple Berry Pie for 4th of July 2024

  The family was getting together at Grandpa's for a 4th of July cookout and I was to bring dessert.  I thought of making strawberry shortcakes, but ultimately decided to make a Triple Berry Pie . I wish I could remember how I got the idea! I prepared to make  this recipe  found online on Taste of Home.  I'd made the pie dough the day before, and set out to start the recipe until, literally at the very last minute, I took a closer look. First of all several reviews mentioned that the pie came out runny and people recommended increasing the amount of cornstarch.  Then, it began to look odd to dot the filling with butter, and it looked even more strange that this recipe had half the amount of berries in the filling than every other recipe I compared it to.  I decided not to take the risk of changing this recipe around and find  another  recipe.
